Instructions
- Whisk together ½ cup of almond milk and ⅓ cup of arrowroot starch in a small bowl and set aside.
- In a blender, combine the remaining 2 ½ cups of almond milk, banana, maple syrup, cocoa powder, and salt.
- Transfer the blender mixture to a medium saucepan and heat over medium heat.
- When the mixture begins to bubble, remove the cover and slowly add the arrowroot mixture while whisking.
- Heat for an additional 3 minutes, whisking constantly, until slightly thickened.
- Transfer the pudding to a glass container, let it cool for a few minutes, then cover and refrigerate for several hours to thicken.
