Ingredients

The pudding

  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon organic maple syrup or honey
  • ¼ cup chia seeds

Toppings

  • ½ cup blueberries
  • 1 piece banana, sliced

Instructions

  1. Combine all the pudding ingredients in a medium bowl with a lid and mix well.
  2. Refrigerate the mixture and stir every 10 minutes for the first 30 minutes as it thickens.
  3. Cover and refrigerate for at least 3 hours or overnight.
  4. Serve when the mixture reaches a custard-like consistency and top with fresh fruits and coconut flakes.
