Ingredients

The pudding

  • 16 oz fresh strawberries, stems removed and halved
  • 1 ½ cups unsweetened vanilla almond milk (or milk of choice)
  • 1 5.3 oz container strawberry Greek yogurt
  • 1 tsp vanilla extract
  • ½ cup chia seeds
  • 5 tsp pure maple syrup

Optional toppings

  • 1 tbsp almond butter
  • to taste whipped cream

Instructions

  1. Blend sliced strawberries, almond milk, yogurt, vanilla, and optional almond butter until smooth.
  2. Pour the mixture into a bowl, add chia seeds, and whisk until combined.
  3. Let the mixture sit for 15 minutes to thicken, then whisk again to remove clumps.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Serve chilled, topped with whipped cream or other toppings as desired.
