Mongolian Chicken

The sauce

dark brown sugar

Instructions
- Coat the chicken in cornstarch in a resealable plastic bag.
- Heat vegetable oil in a pan over high heat.
- Add chicken to the pan in a single layer, seasoning with salt and pepper, and cook until browned.
- Remove chicken and place on paper towels.
- Add garlic and ginger to the pan and cook briefly.
- Stir in soy sauce, sesame oil, water, and brown sugar, bringing to a simmer.
- Mix cornstarch with cold water, then add to the sauce and boil until thickened.
- Return chicken and green onions to the pan, tossing to coat with sauce.
- Serve over rice if desired.
