Mongolian Chicken

Ingredients

The chicken

  • 1 ¼ pounds boneless skinless chicken breast, thinly sliced
  • ¼ cup cornstarch
  • 3 tablespoons vegetable oil
  • ½ cup green onions, cut into 1 inch pieces

The sauce

  • 1 ½ teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon toasted sesame oil
  • ½ cup low sodium soy sauce
  • cup water
  • ½ cup dark brown sugar
  • salt and pepper to taste

Instructions

  1. Coat the chicken in cornstarch in a resealable plastic bag.
  2. Heat vegetable oil in a pan over high heat.
  3. Add chicken to the pan in a single layer, seasoning with salt and pepper, and cook until browned.
  4. Remove chicken and place on paper towels.
  5. Add garlic and ginger to the pan and cook briefly.
  6. Stir in soy sauce, sesame oil, water, and brown sugar, bringing to a simmer.
  7. Mix cornstarch with cold water, then add to the sauce and boil until thickened.
  8. Return chicken and green onions to the pan, tossing to coat with sauce.
  9. Serve over rice if desired.
