Mocha Cheesecake Brownies

Ingredients

The brownie layer

  • ½ cup unsalted butter
  • 8 ounces coarsely chopped quality semi-sweet chocolate
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ + 2 tablespoons all-purpose flour
  • 2 tablespoons natural unsweetened or dutch-process cocoa powder
  • 2 teaspoons espresso powder
  • ¼ teaspoon salt
  • ½ cup mini or regular size semi-sweet chocolate chips

The cheesecake layer

  • 8 ounces full-fat brick cream cheese
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup white chocolate chips

Instructions

  1. Melt the butter and chopped chocolate, then cool slightly.
  2. Preheat the oven to 350°F (177°C) and prepare a baking pan.
  3. Whisk sugar into the cooled chocolate mixture, then add eggs one at a time and whisk in vanilla.
  4. Fold in flour, cocoa powder, espresso powder, and salt.
  5. In another bowl, beat cream cheese until smooth, then mix in sugar, egg, and vanilla, and fold in white chocolate chips.
  6. Spread half of the brownie batter in the pan, top with cheesecake batter, then add remaining brownie batter.
  7. Sprinkle optional chocolate chips on top and bake for 35-38 minutes.
  8. Cool in the pan for 45 minutes, then refrigerate for at least 2 hours before cutting into squares.
