Ingredients

  • 5 cups crusty whole wheat bread, cut into 2-inch squares
  • 1 ½ cups almond milk, or milk of choice
  • ½ cup unsweetened applesauce
  • 2 large eggs, lightly beaten
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 zest lemon
  • 1 pint blueberries

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the milk, applesauce, eggs, maple syrup, vanilla, salt, and lemon zest.
  3. Fold in the blueberries and cubed bread, mixing until the bread is completely coated.
  4. Let the mixture sit for 15 to 20 minutes to allow the bread to soak up the flavors.
  5. Transfer the mixture to a greased 8×8 or 9×9 baking dish.
  6. Bake for 45 to 50 minutes until the top is golden brown and a toothpick comes out clean.
  7. Serve warm or cold, optionally with toppings like cream cheese, maple syrup, or ice cream.
