Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together the milk, applesauce, eggs, maple syrup, vanilla, salt, and lemon zest.
- Fold in the blueberries and cubed bread, mixing until the bread is completely coated.
- Let the mixture sit for 15 to 20 minutes to allow the bread to soak up the flavors.
- Transfer the mixture to a greased 8×8 or 9×9 baking dish.
- Bake for 45 to 50 minutes until the top is golden brown and a toothpick comes out clean.
- Serve warm or cold, optionally with toppings like cream cheese, maple syrup, or ice cream.
