Whole30 Chicken Thighs with Raspberry-Balsamic Sauce

Ingredients

The chicken

  • 4 pieces bone-in skin-on chicken thighs
  • 1 tablespoon ghee or olive oil
  • 1 pinch salt

The sauce

  • 1 cup fresh or frozen raspberries
  • 1 clove garlic
  • ¼ cup aged balsamic vinegar
  • 1 pinch dried thyme
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat the oven to 375º F.
  2. Pat the chicken thighs dry and sprinkle with salt.
  3. Heat ghee in a medium oven-safe skillet over medium-high heat.
  4. Add chicken thighs skin side down and cook for 10 minutes until golden and crispy.
  5. Flip the chicken thighs and transfer the skillet to the oven, cooking for another 10 minutes.
  6. Blend raspberries, garlic, thyme, and balsamic vinegar in a food processor until smooth.
  7. Season the sauce with salt and honey if desired.
  8. Remove chicken from the oven and let rest for 5 minutes before serving with the sauce.
