Raspberry Balsamic Baked Chicken Wings

Ingredients

The chicken

  • 1.5 lbs chicken wings and drumettes
  • to taste Salt and Pepper
  • 2 Tbsp cornstarch

The raspberry balsamic sauce

  • ¼ cup balsamic vinegar
  • ½ cup raspberry jam
  • ¼ cup water
  • 1 tsp freshly grated ginger
  • ½ Tbsp soy sauce
  • 2 Tbsp butter
  • 1 green onion, thinly sliced

Instructions

  1. Preheat the oven to 400ºF and line a baking sheet with foil, placing wire racks on top.
  2. Pat the chicken dry and season with salt and pepper, then coat with cornstarch.
  3. Arrange the chicken on the wire racks without touching each other.
  4. Bake for 45-50 minutes until golden brown and crispy.
  5. Meanwhile, prepare the raspberry balsamic sauce by combining balsamic vinegar, raspberry jam, water, soy sauce, and ginger in a pot over medium-low heat, whisking until dissolved.
  6. Bring the sauce to a boil and let it simmer for five minutes until thickened, then remove from heat and stir in butter.
  7. Once the chicken is done, toss it in a bowl with the sauce and sliced green onion until fully coated.
  8. Serve warm.
