Instructions
- Combine coconut milk, honey, water, vanilla, cinnamon, and salt in a pot and bring to a gentle simmer while whisking.
- Whisk arrowroot starch with a couple tablespoons of the coconut milk mixture until smooth.
- Add the arrowroot mixture to the pot and simmer while whisking for one minute, then cool to room temperature and refrigerate until chilled.
- Chill your ice cream container in the freezer before using.
- Scoop off the thickened top layer of the ice cream mixture and discard, then whisk the chilled mixture before pouring it into the ice cream maker and freeze according to instructions.
- Boil 2 cups of water and steep the chai tea bags for 4 minutes, then remove the bags.
- Scoop ice cream into bowls and pour the hot chai tea over it, then serve immediately.
