Winter Salad with Beets and Pomegranates

Ingredients

The salad

  • 4 cups packed baby salad greens
  • 2 cups packed micro greens
  • 2 cups sliced cooked beets
  • 1 cup fresh pomegranate arils
  • ¼ cup coarsely chopped walnuts

The orange vinaigrette

  • 1 medium orange
  • 2 tablespoons extra virgin olive oil
  • teaspoon ground black pepper
  • a pinch garlic powder
  • a pinch salt (optional)

Instructions

  1. Arrange the salad greens in a large salad bowl or on a platter.
  2. Top with the micro greens.
  3. Arrange the beets on top of the micro greens and sprinkle with pomegranate seeds and walnuts.
  4. For the vinaigrette, zest the orange and juice it into a small bowl.
  5. Add olive oil, black pepper, garlic powder, and salt to the bowl and whisk until blended.
  6. Drizzle the vinaigrette over the salad and serve immediately.
