Ingredients

The eggs

  • 6 large or extra large eggs, hardboiled

The filling

  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard, dijon or yellow
  • ΒΌ teaspoon white vinegar
  • 2 tablespoons dill pickle juice
  • to taste salt and pepper
  • optional paprika
  • optional thinly sliced green onion

Instructions

  1. Slice the hardboiled eggs in half and scoop out the yolks into a mixing bowl.
  2. Add mayonnaise, mustard, vinegar, and dill pickle juice to the yolks and mix until combined.
  3. Adjust the consistency by adding pickle juice slowly to avoid making it too runny.
  4. Season with salt and pepper, and adjust mustard or vinegar to taste.
  5. Spoon the filling back into the halved egg whites.
  6. Sprinkle with paprika and garnish with green onions if desired.
