Deviled Eggs

Ingredients

The eggs

  • 6 large eggs

The filling

  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar or dill pickle brine
  • to taste sea salt
  • to taste freshly ground black pepper
  • optional hot sauce

For garnish

  • to taste paprika
  • to taste chives
  • to taste fresh dill

Instructions

  1. Boil the eggs in a pot covered with cold water, then turn off the heat and let them sit covered for 10 to 12 minutes.
  2. Transfer the eggs to an ice water bath for 14 minutes to cool.
  3. Peel the eggs under cool running water and pat dry.
  4. Slice the eggs in half lengthwise and scoop out the yolks into a bowl.
  5. Add mayonnaise, mustard, vinegar, and hot sauce to the yolks and mash until creamy, seasoning with salt and pepper to taste.
  6. Fill the egg whites with the yolk mixture and garnish with paprika, chives, and/or dill.
