Instructions
- Cook the eggs by steaming or hard boiling and let them cool in ice water.
- Peel the eggs and slice them in half.
- Transfer the yolks to a mixing bowl and mash them with a fork.
- Add mayonnaise, Dijon mustard, white wine vinegar, 2 tsp of chives, cayenne pepper, salt, and pepper to the yolks and mix until smooth.
- Transfer the yolk mixture to a piping bag and pipe it into the egg whites.
- Garnish with bacon, remaining chives, and sprinkle with paprika before serving.
