Ingredients

The eggs

  • 6 large eggs

The filling

  • ¼ cup low fat mayonnaise
  • 1 teaspoon white vinegar
  • 1 teaspoon Nance’s Sharp and Creamy Mustard
  • 1 teaspoon yellow mustard
  • teaspoon salt
  • a pinch black pepper
  • ¼ teaspoon paprika

Instructions

  1. Hard boil the eggs by placing them in a pot and covering with water.
  2. Bring the water to a boil, then cover the pot and turn off the heat, letting the eggs sit for 12-14 minutes.
  3. Prepare an ice water bath while the eggs sit.
  4. Transfer the eggs to the ice water bath to cool for a few minutes.
  5. Peel the eggs under cold running water and slice them in half lengthwise.
  6. Scoop the yolks into a mixing bowl and mash them.
  7. Mix in the mayonnaise, vinegar, mustards, salt, and pepper until smooth.
  8. Fill the egg whites with the yolk mixture and sprinkle with paprika before serving.
