Deviled Eggs

Ingredients

The eggs

  • 8 large eggs
  • Kosher salt

The filling

  • 3 Tbsp. mayonnaise
  • 3 Tbsp. very finely chopped celery
  • 2 Tbsp. finely chopped drained sweet pickle relish
  • 2 Tbsp. finely chopped scallion
  • 2 Tbsp. yellow mustard
  • 2 tsp. very finely chopped parsley
  • 2 dashes hot sauce (such as Tabasco)
  • Freshly ground black pepper

For serving

  • more parsley for serving
  • more hot sauce for serving

Instructions

  1. Boil salted water in a small pot and carefully add the eggs; simmer for 10 minutes.
  2. Transfer eggs to an ice water bath to cool, then peel them.
  3. In a medium bowl, whisk together mayonnaise, celery, relish, scallion, mustard, parsley, and hot sauce; season with salt and pepper.
  4. Halve the eggs lengthwise, scoop out the yolks and mix them into the mayonnaise mixture; fill the egg whites with this mixture using two forks.
  5. Top with pepper and parsley, and serve with additional hot sauce.
