Instructions
- Boil salted water in a small pot and carefully add the eggs; simmer for 10 minutes.
- Transfer eggs to an ice water bath to cool, then peel them.
- In a medium bowl, whisk together mayonnaise, celery, relish, scallion, mustard, parsley, and hot sauce; season with salt and pepper.
- Halve the eggs lengthwise, scoop out the yolks and mix them into the mayonnaise mixture; fill the egg whites with this mixture using two forks.
- Top with pepper and parsley, and serve with additional hot sauce.
