Ingredients

The eggs

  • 8 pieces eggs

The filling

  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 2–4 teaspoons pickle juice or vinegar or lemon juice
  • ¼ cup finely chopped chives
  • to taste kosher salt or flaky sea salt
  • to taste freshly cracked pepper
  • to taste paprika, for finishing

Instructions

  1. Steam the eggs for 12 minutes, then transfer them to an ice bath.
  2. Peel and halve the eggs, placing the yolks in a bowl and the whites on a plate in the fridge.
  3. Mash the yolks with a fork, then mix in mayonnaise, mustard, and pickle juice, adjusting to taste.
  4. Fill the egg whites with the yolk mixture using a spoon or piping bag.
  5. Sprinkle with reserved chives and paprika before serving.
