Instructions
- Mix the dry ingredients for the crust in a bowl and chop the butter into small cubes.
- Blend the crust ingredients in a food processor until crumbly.
- Form two dough balls, cover with plastic wrap, and refrigerate for at least two hours.
- Preheat the oven to 180°C (350°F) and grease a 9-inch pie pan.
- Simmer the blueberry filling in a saucepan over low heat for 4-5 minutes.
- Roll out the dough, place the larger piece in the pie pan, fill with blueberry mixture, and cover with the second layer of dough.
- Crimp the edges and brush with egg wash before baking for 45-50 minutes until golden brown.
