Ingredients

The crust

  • 2 cups almond flour
  • ½ cup coconut flour
  • ½ teaspoon baking powder
  • ½ teaspoon xanthan gum
  • ¾ cup butter (salted and cold)

The filling

  • cups blueberries (fresh or frozen)
  • ½ cup granulated sweetener of choice
  • 1 tablespoon lemon juice
  • 1 tablespoon chia seeds

Other

  • 1 large egg (whisked)

Instructions

  1. Mix the dry ingredients for the crust in a bowl and chop the butter into small cubes.
  2. Blend the crust ingredients in a food processor until crumbly.
  3. Form two dough balls, cover with plastic wrap, and refrigerate for at least two hours.
  4. Preheat the oven to 180°C (350°F) and grease a 9-inch pie pan.
  5. Simmer the blueberry filling in a saucepan over low heat for 4-5 minutes.
  6. Roll out the dough, place the larger piece in the pie pan, fill with blueberry mixture, and cover with the second layer of dough.
  7. Crimp the edges and brush with egg wash before baking for 45-50 minutes until golden brown.
