Chicken with Creamy Avocado Sauce

Ingredients

The Chicken

  • 16 ounces boneless chicken breast
  • 2 tablespoons avocado oil
  • ½ teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder

The Avocado Sauce

  • 1 whole avocado, chopped
  • ¼ cup Greek yogurt or mayo or sour cream
  • ¼ cup chopped red onion
  • 2 tablespoons chopped cilantro
  • 1 whole jalapeno, chopped
  • 1 tablespoon lime juice

For Serving

  • to taste zucchini (for zoodles)

Instructions

  1. Combine avocado oil, smoked paprika, onion powder, and salt in a small bowl to make the marinade.
  2. Place chicken in a large zip-top plastic bag and pour the marinade over it. Allow to marinate for at least 30 minutes or up to overnight.
  3. In the meantime, prepare the avocado sauce by blending avocado, Greek yogurt, red onion, cilantro, jalapeno, and lime juice until smooth. Refrigerate until ready to serve.
  4. Preheat a grill or grill pan to medium heat. Remove the chicken from the marinade and grill for about 8 minutes on each side or until cooked through.
  5. Serve the grilled chicken topped with the avocado sauce.
