Ingredients

  • 1 tablespoon avocado oil
  • 1 lb boneless skinless chicken breast
  • to taste salt and pepper
  • 2 avocados, mashed
  • cup finely diced celery
  • cup finely diced red onion
  • 3 tablespoons dijon mustard
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh basil, chopped
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder

Instructions

  1. Season the chicken breast with salt and pepper on both sides.
  2. Heat a skillet over medium-high heat and add the avocado oil and chicken.
  3. Cook the chicken for 4-6 minutes per side until no longer pink.
  4. Remove from heat and let the chicken cool for 10 minutes before shredding.
  5. In a large bowl, combine the shredded chicken, mashed avocado, celery, red onion, dijon mustard, lemon juice, basil, cumin, and garlic powder.
  6. Mix everything together until well combined and serve.
