Ingredients

  • 2 cups poached chicken, finely diced
  • 1 medium Hass avocado, mashed
  • cup celery, finely diced
  • 2 tablespoons red onion or scallion, minced
  • 2 tablespoons cilantro, finely chopped
  • 2 tablespoons avocado oil
  • 1 tablespoon fresh lemon juice
  • to taste salt
  • to taste pepper

Instructions

  1. Prepare the celery, onion, and cilantro in a medium bowl.
  2. Dice the poached chicken and add it to the bowl with the vegetables.
  3. Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
  4. Mash the avocado until smooth and creamy, then mix in the lemon juice and avocado oil.
