Avocado Chicken Salad

Hass avocado, mashed

avocado oil

Instructions
- Prepare the celery, onion, and cilantro in a medium bowl.
- Dice the chicken and add it to the bowl with the vegetables.
- Cut the avocado in half and remove the pit.
- Scoop out the avocado flesh and mash it until smooth.
- Stir in the lemon juice and avocado oil into the mashed avocado.
- Add the mashed avocado to the chicken and vegetable mixture and stir to combine.
- Serve over lettuce or on a low carb bagel.
