Ingredients

  • 2 cups poached chicken, finely diced
  • 1 medium Hass avocado, mashed
  • cup celery, finely diced
  • 2 tablespoons red onion or scallion, minced
  • 2 tablespoons cilantro, finely chopped
  • 2 tablespoons avocado oil
  • 1 tablespoon fresh lemon juice
  • to taste salt and pepper

Instructions

  1. Prepare the celery, onion, and cilantro in a medium bowl.
  2. Dice the chicken and add it to the bowl with the vegetables.
  3. Cut the avocado in half and remove the pit.
  4. Scoop out the avocado flesh and mash it until smooth.
  5. Stir in the lemon juice and avocado oil into the mashed avocado.
  6. Add the mashed avocado to the chicken and vegetable mixture and stir to combine.
  7. Serve over lettuce or on a low carb bagel.
