Slow Cooker Cheater Pork Stew

Ingredients

  • 3 pounds pork shoulder, cut into 1.5 inch cubes
  • 2 small onions, thinly sliced
  • 6 cloves garlic, peeled and smashed
  • ½ pound baby carrots
  • 1 small cabbage, cut into 8 wedges
  • 1 cup marinara sauce
  • 1 tablespoon Red Boat fish sauce
  • 1 tablespoon Sunny Paris seasoning or your favorite seasoning blend
  • 1 tablespoon aged balsamic vinegar
  • to taste kosher salt
  • to taste freshly ground black pepper
  • ¼ cup finely chopped Italian parsley (optional garnish)

Instructions

  1. Slice the onions and smash the garlic cloves, then add them with the carrots to the slow cooker and season with salt and pepper.
  2. Cube the pork and toss it with Sunny Paris seasoning and fish sauce, adding more salt and pepper to taste.
  3. Place the seasoned pork on top of the onions and carrots, and tuck the cabbage wedges on top.
  4. Drizzle the marinara sauce over the mixture and add more salt and pepper.
  5. Cover and cook on low for 8-10 hours.
  6. Once the pork and veggies are fork-tender, adjust seasoning with balsamic vinegar, salt, and pepper, then stir well.
  7. Transfer the stew to a serving bowl and garnish with fresh Italian parsley if desired.
