Cranberry Almond Protein Bars

Instructions
- Line an 8 x 8 baking dish with parchment paper and set aside.
- In a large mixing bowl, combine almonds, puffed rice cereal, cranberries, coconut, and hemp seeds.
- In a small saucepan, mix brown rice syrup, honey, and vanilla. Heat over medium-high until boiling, then boil for 4-5 minutes until it reaches about 260 degrees.
- Pour the sauce over the almond mixture and quickly stir to coat.
- Transfer the mixture to the baking dish and press it firmly into an even layer.
- Let the bars cool for 30 minutes or until they reach room temperature, then cut into desired shapes.
