Ingredients

The base ingredients

  • 2 cups Blue Diamond Almonds
  • cup puffed rice cereal
  • cup dried cranberries
  • ½ cup unsweetened coconut flakes
  • 1 heaping tablespoon hemp seeds (optional)

The binding sauce

  • cup brown rice syrup
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8 x 8 baking dish with parchment paper and set aside.
  2. In a large mixing bowl, combine almonds, puffed rice cereal, cranberries, coconut, and hemp seeds.
  3. In a small saucepan, mix brown rice syrup, honey, and vanilla. Heat over medium-high until boiling, then boil for 4-5 minutes until it reaches about 260 degrees.
  4. Pour the sauce over the almond mixture and quickly stir to coat.
  5. Transfer the mixture to the baking dish and press it firmly into an even layer.
  6. Let the bars cool for 30 minutes or until they reach room temperature, then cut into desired shapes.
