Classic Vegan Falafel

Instructions
- Rinse the chickpeas and soak them in water for 1 hour after boiling briefly.
- Process the parsley, onion, and garlic in a food processor until well mixed.
- Add the soaked chickpeas and the remaining ingredients to the processor and blend until a near paste forms.
- Refrigerate the mixture for 1 hour to firm up.
- Form the mixture into small discs or balls.
- Heat oil in a skillet and fry the falafel until golden brown on each side.
- Serve with your choice of sauce or in pita.
