Classic Vegan Falafel

Ingredients

  • cups dry chickpeas
  • ½ cup chopped fresh parsley
  • ½ cup chopped white onion
  • 4-7 small cloves garlic
  • 2 Tbsp gluten-free oat flour
  • 1-1½ tsp sea salt
  • 2-3 tsp ground cumin
  • 1 pinch ground cardamom
  • 1 tsp ground coriander
  • 1 pinch cayenne pepper (optional)
  • as needed none grape seed oil (for pan frying)

Instructions

  1. Rinse the chickpeas and soak them in water for 1 hour after boiling briefly.
  2. Process the parsley, onion, and garlic in a food processor until well mixed.
  3. Add the soaked chickpeas and the remaining ingredients to the processor and blend until a near paste forms.
  4. Refrigerate the mixture for 1 hour to firm up.
  5. Form the mixture into small discs or balls.
  6. Heat oil in a skillet and fry the falafel until golden brown on each side.
  7. Serve with your choice of sauce or in pita.
