Vegan Falafel

Ingredients

The falafel mixture

  • 1 cup roughly chopped white onion
  • 3 cloves garlic
  • 1 cup cooked chickpeas, drained
  • ½ cup lightly packed parsley leaves
  • ½ cup lightly packed cilantro leaves
  • ½ teaspoon salt
  • teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon baking powder
  • ¼ cup all-purpose flour

For cooking

  • 2 tablespoons canola oil or olive oil

For serving (optional)

  • pita bread for serving
  • hummus for serving

Instructions

  1. Pulse the onion and garlic in a food processor until finely minced, then set aside.
  2. Add chickpeas, parsley, cilantro, salt, chili powder, and cumin to the processor and pulse until roughly blended.
  3. Return the onion mixture to the processor, add baking powder and enough flour to form a non-sticky ball.
  4. Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for 1 hour.
  5. Form the chilled mixture into balls using a scoop or spoons.
  6. Heat oil in a skillet over medium heat, then add falafel balls and cook until browned on both sides.
  7. Transfer cooked falafel to a paper towel-lined rack and season with salt.
  8. Serve falafel in pita with hummus or baba ganoush, or enjoy unwrapped.
