Vegan Falafel

The falafel mixture

all-purpose flour
For cooking

canola oil or olive oil

Instructions
- Pulse the onion and garlic in a food processor until finely minced, then set aside.
- Add chickpeas, parsley, cilantro, salt, chili powder, and cumin to the processor and pulse until roughly blended.
- Return the onion mixture to the processor, add baking powder and enough flour to form a non-sticky ball.
- Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for 1 hour.
- Form the chilled mixture into balls using a scoop or spoons.
- Heat oil in a skillet over medium heat, then add falafel balls and cook until browned on both sides.
- Transfer cooked falafel to a paper towel-lined rack and season with salt.
- Serve falafel in pita with hummus or baba ganoush, or enjoy unwrapped.
