Instructions
- Combine parsley, garlic, lemon juice, cumin, salt, and pepper in a food processor and blend until mixed.
- Add chickpeas and pulse until slightly chunky.
- Transfer to a bowl, mix in nut meal or oat flour until a firm dough forms.
- Divide the mixture into 4 sections and shape into patties about ½-inch thick.
- Refrigerate or freeze the patties for 15 minutes to firm up.
- Preheat the oven to 375°F.
- Optionally, heat oil in a skillet and sauté the patties until golden brown on both sides.
- Bake the patties for 30-40 minutes, flipping halfway through for even cooking.
- Serve warm in pita or on a salad with your choice of toppings.
