Ingredients

The Falafel

  • 1 bundle fresh parsley
  • 3 large cloves garlic
  • 1 large lemon
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • teaspoon cumin
  • 1 15-ounce can chickpeas
  • ¼ - ½ cup ground raw walnuts, pecans, almonds, or GF oat flour

Toppings / For Serving (optional)

  • to taste Garlic Dill sauce
  • to taste Chili Garlic Sauce or Sriracha
  • to taste 5-minute Hummus
  • to taste Tomato
  • to taste Lettuce
  • to taste Onion
  • to serve Pita or sturdy greens (such as chard or collard greens)

Instructions

  1. Combine parsley, garlic, lemon juice, cumin, salt, and pepper in a food processor and blend until mixed.
  2. Add chickpeas and pulse until slightly chunky.
  3. Transfer to a bowl, mix in nut meal or oat flour until a firm dough forms.
  4. Divide the mixture into 4 sections and shape into patties about ½-inch thick.
  5. Refrigerate or freeze the patties for 15 minutes to firm up.
  6. Preheat the oven to 375°F.
  7. Optionally, heat oil in a skillet and sauté the patties until golden brown on both sides.
  8. Bake the patties for 30-40 minutes, flipping halfway through for even cooking.
  9. Serve warm in pita or on a salad with your choice of toppings.
