Baked Vegan Gluten-Free Falafel

Instructions
- Drain the soaked chickpeas and place them in a food processor with garlic, onion, parsley, tapioca starch, cumin, salt, coriander, and pepper.
- Process until well blended, scraping down the sides as needed.
- Shape the mixture into balls or patties.
- For baking, place the balls on a parchment-lined baking sheet and bake at 350°F (175°C) for 15 minutes on each side.
- For frying, heat oil in a pan, test the temperature, and cook the falafel balls until golden brown on both sides.
- Serve with the optional dipping sauces.
