Baked Vegan Gluten-Free Falafel

Ingredients

The falafel

  • cups dried chickpeas, soaked in water for at least 6 hours
  • 3 cloves garlic, peeled
  • 1 small onion, coarsely chopped
  • ¼ cup chopped flat-leaf parsley
  • 1 tablespoon tapioca starch
  • 2 teaspoons ground cumin
  • teaspoons sea salt
  • 1 teaspoon ground coriander
  • ½ teaspoon freshly cracked black pepper
  • ½ cup grapeseed oil or neutral oil of your choice

Optional sauce for dipping

  • 1 recipe Lemon tahini sauce
  • 1 recipe Vegan Tzatziki

Instructions

  1. Drain the soaked chickpeas and place them in a food processor with garlic, onion, parsley, tapioca starch, cumin, salt, coriander, and pepper.
  2. Process until well blended, scraping down the sides as needed.
  3. Shape the mixture into balls or patties.
  4. For baking, place the balls on a parchment-lined baking sheet and bake at 350°F (175°C) for 15 minutes on each side.
  5. For frying, heat oil in a pan, test the temperature, and cook the falafel balls until golden brown on both sides.
  6. Serve with the optional dipping sauces.
