Ingredients

  • 1 ¾ cups coconut milk
  • 1 unit lime zest
  • 1 unit lemon zest
  • ¼ cup fresh lime juice
  • ¼ cup fresh lemon juice
  • cup maple syrup

Instructions

  1. Chill the coconut milk in the refrigerator for several hours.
  2. Remove the zest from the lime and lemon using a microplane.
  3. Squeeze the juice from the lemon and lime to obtain about ¼ cup of juice.
  4. Combine all ingredients in a large bowl and mix well.
  5. Churn the mixture in an ice cream maker according to the manufacturer's instructions, or freeze in a shallow container.
  6. If frozen solid, soften the ice cream in the refrigerator for about 30 minutes before scooping.
