Lime and Coconut Ice Cream

Ingredients

  • 1 ½ cups whole milk
  • 1 cup sweetened shredded coconut
  • ¼ cup granulated sugar
  • a pinch salt
  • 4 large egg yolks
  • 1 14 ounce can sweetened condensed milk
  • ½ cup fresh lime juice
  • 1 Tablespoon finely chopped lime zest
  • 1 teaspoon coconut extract

Instructions

  1. Combine milk, coconut, sugar, and salt in a small saucepan and simmer until reduced by a fourth, then steep for one hour.
  2. Strain the mixture and reheat it over medium-low heat.
  3. Whisk egg yolks in a separate bowl, then temper them with half of the hot milk mixture before returning it to the saucepan to thicken.
  4. In a large mixing bowl over an ice bath, combine sweetened condensed milk, lime juice, and zest, then strain the custard into this mixture and stir until cooled.
  5. Add coconut extract, stir, and refrigerate until thoroughly chilled, about 5 hours or overnight.
  6. Churn in an ice cream maker according to the manufacturer's instructions.
