Lime and Coconut Ice Cream

Instructions
- Combine milk, coconut, sugar, and salt in a small saucepan and simmer until reduced by a fourth, then steep for one hour.
- Strain the mixture and reheat it over medium-low heat.
- Whisk egg yolks in a separate bowl, then temper them with half of the hot milk mixture before returning it to the saucepan to thicken.
- In a large mixing bowl over an ice bath, combine sweetened condensed milk, lime juice, and zest, then strain the custard into this mixture and stir until cooled.
- Add coconut extract, stir, and refrigerate until thoroughly chilled, about 5 hours or overnight.
- Churn in an ice cream maker according to the manufacturer's instructions.
