Ingredients

The base

  • 3 cups whole milk
  • 1 cup heavy cream
  • 8 large egg yolks
  • 1 ½ cups sugar

The flavoring

  • Zest of 6 limes
  • 6 tablespoons fresh lime juice

Instructions

  1. 1. Beat together egg yolks, sugar, and lime zest until creamy.
  2. 2. Heat the milk and cream in a saucepan over medium-high heat.
  3. 3. Temper the egg mixture by gradually adding warm milk while stirring.
  4. 4. Pour the tempered egg mixture back into the saucepan with the remaining milk.
  5. 5. Stir the mixture for about 5 minutes until it thickens.
  6. 6. Cover and chill the custard in the refrigerator for at least 4 hours.
  7. 7. Strain the custard through a fine mesh strainer.
  8. 8. Add fresh lime juice to the custard and stir before churning.
  9. 9. Freeze the mixture according to your ice cream maker's instructions.
