Instructions
- 1. Beat together egg yolks, sugar, and lime zest until creamy.
- 2. Heat the milk and cream in a saucepan over medium-high heat.
- 3. Temper the egg mixture by gradually adding warm milk while stirring.
- 4. Pour the tempered egg mixture back into the saucepan with the remaining milk.
- 5. Stir the mixture for about 5 minutes until it thickens.
- 6. Cover and chill the custard in the refrigerator for at least 4 hours.
- 7. Strain the custard through a fine mesh strainer.
- 8. Add fresh lime juice to the custard and stir before churning.
- 9. Freeze the mixture according to your ice cream maker's instructions.
