Ingredients

  • ¼ cup allulose
  • 2 tablespoons cornstarch
  • ¼ teaspoon salt
  • 2 cups milk
  • 2 large egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk together the allulose, cornstarch, and salt in a small bowl.
  2. Pour the mixture into a saucepan and whisk in the milk.
  3. Heat the saucepan over medium heat until it boils, whisking continuously.
  4. Reduce the heat and scoop out ½ cup of the mixture to whisk with the egg yolks.
  5. Combine the egg yolk mixture back into the saucepan and simmer for 3 more minutes.
  6. Remove from heat and whisk in the butter and vanilla extract.
  7. Distribute the pudding into ramekins and refrigerate for at least an hour.
