Instructions
- Whisk together the allulose, cornstarch, and salt in a small bowl.
- Pour the mixture into a saucepan and whisk in the milk.
- Heat the saucepan over medium heat until it boils, whisking continuously.
- Reduce the heat and scoop out ½ cup of the mixture to whisk with the egg yolks.
- Combine the egg yolk mixture back into the saucepan and simmer for 3 more minutes.
- Remove from heat and whisk in the butter and vanilla extract.
- Distribute the pudding into ramekins and refrigerate for at least an hour.
