Buffalo Chicken Salad with Blue Cheese Guacamole

Ingredients

Chicken and Onion Rings

  • 4 pieces small chicken breasts, cut into strips
  • 2 pieces large sweet onions, cut into ½ inch slices
  • cups buttermilk
  • cups panko bread crumbs
  • cups cornmeal
  • ½ cup whole wheat pastry flour or white whole wheat flour
  • ¼ teaspoon cayenne pepper
  • a good pinch salt and pepper
  • cups buffalo wing sauce, plus more for drizzling

Salad

  • 8-12 cups butter lettuce, chopped
  • cups grape tomatoes, halved
  • 2 pieces carrots, sliced into matchsticks
  • 6 pieces green onions, sliced
  • ½ cup fresh cilantro or parsley
  • 1 batch blue cheese guacamole or regular guacamole
  • to taste crumbled blue cheese for topping

Super Quick Greek Yogurt Ranch

  • ¾ cup plain Greek yogurt
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried chives
  • ¼ teaspoon dried dill weed
  • teaspoon garlic powder
  • teaspoon onion powder
  • teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon cayenne (optional)
  • ¼ teaspoon smoked paprika (optional)

Instructions

  1. Make the ranch dressing by mixing Greek yogurt with parsley, chives, dill, garlic powder, onion powder, salt, and pepper. Thin with buttermilk if needed and refrigerate.
  2. Preheat the oven to 450°F and line baking sheets with parchment paper.
  3. Marinate the chicken in half the buttermilk and set aside the rest.
  4. Coat the onion slices in flour, then dip in the remaining buttermilk and coat with the panko and cornmeal mixture.
  5. Arrange the onion rings on a baking sheet, spray with oil, and bake for 20-25 minutes until crisp, flipping halfway through.
  6. Dredge the chicken in the remaining buttermilk and then the panko mixture, place on a baking sheet, and spray with oil.
  7. Bake the chicken for 10-12 minutes, flip, spray again, and bake for another 10-12 minutes.
  8. Toss the cooked chicken in buffalo sauce and return to the oven for 5 minutes.
  9. In a large bowl, combine the lettuce, carrots, tomatoes, green onions, and cilantro, then divide into serving bowls.
  10. Top each salad with chicken, onion rings, blue cheese guacamole, and crumbled blue cheese. Drizzle with ranch and extra buffalo sauce as desired.
