Buffalo Chicken Salad with Blue Cheese Guacamole

Super Quick Greek Yogurt Ranch

Instructions
- Make the ranch dressing by mixing Greek yogurt with parsley, chives, dill, garlic powder, onion powder, salt, and pepper. Thin with buttermilk if needed and refrigerate.
- Preheat the oven to 450°F and line baking sheets with parchment paper.
- Marinate the chicken in half the buttermilk and set aside the rest.
- Coat the onion slices in flour, then dip in the remaining buttermilk and coat with the panko and cornmeal mixture.
- Arrange the onion rings on a baking sheet, spray with oil, and bake for 20-25 minutes until crisp, flipping halfway through.
- Dredge the chicken in the remaining buttermilk and then the panko mixture, place on a baking sheet, and spray with oil.
- Bake the chicken for 10-12 minutes, flip, spray again, and bake for another 10-12 minutes.
- Toss the cooked chicken in buffalo sauce and return to the oven for 5 minutes.
- In a large bowl, combine the lettuce, carrots, tomatoes, green onions, and cilantro, then divide into serving bowls.
- Top each salad with chicken, onion rings, blue cheese guacamole, and crumbled blue cheese. Drizzle with ranch and extra buffalo sauce as desired.
