Ingredients

The salad

  • 2 cups cooked chicken breast, chopped or shredded
  • ½ cup celery, diced
  • ½ cup onion, diced
  • cup carrot, diced
  • ¼ cup low fat Greek yogurt
  • 1 tablespoon mayonnaise
  • 2 tablespoons buffalo hot sauce
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 8-10 pieces butter lettuce cups

Optional toppings

  • to taste blue cheese dressing
  • to taste extra hot sauce

Instructions

  1. Combine all ingredients in a medium bowl.
  2. Mix until well combined and the chicken and veggies are coated in buffalo sauce.
  3. Spoon the mixture into lettuce cups.
  4. Top with extra hot sauce and blue cheese dressing if desired.
  5. Enjoy!
