Instructions
- Pound chicken breasts to an even thickness and season with salt and pepper.
- Heat olive oil in a sauté pan and cook chicken for about 5 minutes per side until cooked through.
- Remove chicken from heat and let it rest before cutting it into strips and tossing with buffalo sauce.
- In a bowl, combine lettuce, celery, scallions, and avocado with the Greek Yogurt Blue Cheese Dressing.
- Top the salad with the buffalo chicken and serve.
