  • 2 8-ounce boneless, skinless chicken breasts
  • to taste salt and pepper
  • 2 Tbsp. olive oil
  • 3 Tbsp. cayenne hot sauce
  • 8 cups roughly-chopped Romaine lettuce
  • 2 stalks celery, thinly sliced
  • 2 scallions, thinly sliced
  • 1 whole avocado, diced
  • to taste crumbled blue cheese
  • to taste Greek Yogurt Blue Cheese Dressing

Greek Yogurt Blue Cheese Dressing Ingredients

  • ½ cup plain Greek yogurt
  • ½ cup crumbled blue cheese
  • 1 clove garlic, finely minced
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. lemon juice
  • pinch cayenne pepper
  • pinch salt
  • pinch black pepper
  • 1-2 Tbsp. milk (optional, to thin the dressing)

Instructions

  1. Pound chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a sauté pan and cook chicken for about 5 minutes per side until cooked through.
  3. Remove chicken from heat and let it rest before cutting it into strips and tossing with buffalo sauce.
  4. In a bowl, combine lettuce, celery, scallions, and avocado with the Greek Yogurt Blue Cheese Dressing.
  5. Top the salad with the buffalo chicken and serve.
