Easy Salsa Rice

Ingredients

  • 1 tablespoon olive oil
  • ¼ cup chopped onion
  • 1 ½ cups long grain white rice
  • 2 cups reduced sodium chicken or vegetable broth
  • 1 cup salsa
  • ½ teaspoon ground cumin
  • a sprinkle garlic powder

Instructions

  1. Heat the olive oil in a large sauté pan over medium heat.
  2. Add the chopped onion and cook until softened, about 3-5 minutes.
  3. Stir in the rice, cooking until some grains turn golden, about 4-5 minutes.
  4. Add the broth, salsa, cumin, and garlic powder, stirring to combine.
  5. Cover the pan, reduce the heat, and simmer for 20 minutes until the liquid is absorbed and the rice is cooked.
