Easy Taco Rice

Ingredients

  • 2 Tbsp cooking oil
  • 1 small onion
  • 1 clove garlic
  • 2 cups long grain white rice
  • ½ Tbsp chili powder
  • ½ tsp cumin
  • ¼ tsp oregano
  • 3 cups water
  • 1 tsp salt
  • 2 green onions sliced

Instructions

  1. Dice the onion and mince the garlic.
  2. Sauté the onion and garlic in cooking oil until soft.
  3. Add rice, chili powder, cumin, and oregano; stir and cook for 2 minutes.
  4. Add water and salt, stir briefly, then bring to a boil.
  5. Once boiling, reduce heat to low and simmer for 15 minutes.
  6. Turn off heat and let sit covered for 10 minutes.
  7. Fluff the rice with a fork and top with sliced green onions before serving.
