Ingredients

The filling

  • 6 cups blackberries, fresh or frozen
  • 2 tablespoons cornstarch
  • cup honey or pure maple syrup
  • 1 ½ teaspoons pure vanilla extract

The topping

  • 1 cup old fashioned rolled oats
  • ¾ cup chopped walnuts, almonds, or pecans (untoasted)
  • ½ cup almond flour or almond meal
  • ½ cup flaked coconut
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • cup extra virgin olive oil or melted coconut oil
  • cup honey or pure maple syrup

For serving

  • to taste vanilla ice cream, frozen yogurt, or Greek yogurt

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish.
  2. Mix blackberries with cornstarch, honey, and vanilla in a bowl.
  3. Transfer the blackberry mixture to the baking dish.
  4. In another bowl, combine oats, nuts, almond meal, coconut, cinnamon, and salt.
  5. Drizzle olive oil and honey over the dry ingredients and mix until moistened.
  6. Spread the topping over the blackberry mixture.
  7. Bake for 45-55 minutes until bubbly and golden.
  8. Let rest for 10 minutes before serving warm.
