Ingredients

The fudge

  • 1 cup packed dates (pitted)
  • 1 cup creamy salted peanut butter
  • ½ cup unsweetened cacao powder
  • ¼-½ cup melted coconut oil

Optional toppings

  • to taste chopped roasted salted peanuts
  • to taste cacao nibs

Instructions

  1. Process the pitted dates in a food processor until a fine paste or ball forms.
  2. Add the peanut butter and blend until combined.
  3. Incorporate the cacao powder and blend again.
  4. Add melted coconut oil gradually until a fudgy paste forms; adjust oil as needed.
  5. Transfer the mixture to a parchment-lined pan and smooth the surface.
  6. Top with optional peanuts and cacao nibs if desired.
  7. Freeze until firm, about 20 minutes, then slice into squares.
  8. Store leftovers in the refrigerator for up to 1 week or in the freezer for up to 1 month.
