Chocolate + Peanut Butter Fudge

Ingredients

  • 330 g fresh dates, pitted
  • cup natural smooth peanut butter
  • 2 teaspoons vanilla bean paste
  • 80 g 70% dark chocolate
  • 1 teaspoon white or black sea salt flakes (optional)

Instructions

  1. Process the dates, peanut butter, and vanilla in a food processor until smooth.
  2. Press the mixture into a greased loaf tin lined with baking paper.
  3. Melt the chocolate in a heatproof bowl over simmering water.
  4. Pour the melted chocolate over the peanut butter mixture and smooth the top.
  5. Sprinkle with salt if using, and freeze for 30 minutes until firm.
  6. Cut into pieces using a hot knife to serve.
