Instructions
- Preheat the oven to 375°F (191°C) and line a baking sheet with parchment paper.
- Cut each banana pepper in half lengthwise and remove seeds and white flesh. Arrange them open side up on the baking sheet.
- Heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook until browned, about 8-10 minutes.
- Reduce heat to medium, add minced garlic, and stir for 1 minute until fragrant.
- Stir in diced tomatoes and fresh parsley, cooking for about 5 minutes until tomato juice evaporates.
- Mix in cream cheese and parmesan cheese, seasoning with salt and pepper to taste.
- Fill banana peppers with the sausage mixture and top with shredded mozzarella cheese.
- Bake for 18-20 minutes until the peppers are soft and the cheese is melted and golden.
