Stuffed Banana Peppers

Ingredients

The Peppers

  • 4 large Banana peppers

The Filling

  • 1 tbsp Olive oil
  • 1 lb Ground Italian sausage
  • 2 cloves Garlic
  • 2 small Tomatoes
  • 1 tbsp Fresh parsley
  • ½ tsp Sea salt
  • ½ tsp Black pepper
  • 4 oz Cream cheese
  • ¼ cup Grated parmesan cheese
  • ¾ cup Mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (191°C) and line a baking sheet with parchment paper.
  2. Cut each banana pepper in half lengthwise and remove seeds and white flesh. Arrange them open side up on the baking sheet.
  3. Heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook until browned, about 8-10 minutes.
  4. Reduce heat to medium, add minced garlic, and stir for 1 minute until fragrant.
  5. Stir in diced tomatoes and fresh parsley, cooking for about 5 minutes until tomato juice evaporates.
  6. Mix in cream cheese and parmesan cheese, seasoning with salt and pepper to taste.
  7. Fill banana peppers with the sausage mixture and top with shredded mozzarella cheese.
  8. Bake for 18-20 minutes until the peppers are soft and the cheese is melted and golden.
