Grilled Stuffed Peppers

Instructions
- Preheat the grill to medium-high heat.
- Slice the bell peppers in half and remove the seeds and membranes.
- Heat olive oil in a skillet, add sausage, Italian seasoning, and red pepper flakes, and cook until browned.
- Stir in diced tomatoes and red wine vinegar, then simmer for 1 minute.
- Remove from heat and mix in cooked rice and half of the Mozzarella and Parmesan.
- Grill the pepper halves for 6 to 9 minutes until slightly tender.
- Fill the grilled peppers with the sausage mixture.
- Return the stuffed peppers to the grill and cook for an additional 20 minutes.
- During the last few minutes, top with remaining cheese and let it melt.
- Transfer to a baking dish, sprinkle with fresh basil, and serve.
