Grilled Stuffed Peppers

Ingredients

The peppers

  • 4 large red bell peppers

The filling

  • 2 teaspoons extra virgin olive oil
  • 1 pound uncooked Italian chicken sausage or turkey sausage
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • 1 can diced tomatoes (15 ounces)
  • 1 tablespoon red wine vinegar
  • 1 ½ cups cooked brown rice
  • 1 cup shredded Mozzarella cheese
  • ½ cup Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the bell peppers in half and remove the seeds and membranes.
  3. Heat olive oil in a skillet, add sausage, Italian seasoning, and red pepper flakes, and cook until browned.
  4. Stir in diced tomatoes and red wine vinegar, then simmer for 1 minute.
  5. Remove from heat and mix in cooked rice and half of the Mozzarella and Parmesan.
  6. Grill the pepper halves for 6 to 9 minutes until slightly tender.
  7. Fill the grilled peppers with the sausage mixture.
  8. Return the stuffed peppers to the grill and cook for an additional 20 minutes.
  9. During the last few minutes, top with remaining cheese and let it melt.
  10. Transfer to a baking dish, sprinkle with fresh basil, and serve.
