Paleo Pizza Crust

Ingredients

  • 8 large egg whites
  • 5 whole eggs (optional for thicker crusts)
  • ¼ cup coconut flour (sifted)
  • ½ teaspoon baking powder
  • to taste spices (salt, black pepper, Italian seasonings)

Instructions

  1. 1. Whisk the egg whites (or whole eggs) in a large mixing bowl until opaque.
  2. 2. Sift in the coconut flour and whisk until no clumps remain.
  3. 3. Add the baking powder and spices, and whisk until combined.
  4. 4. Heat a greased pan over low heat and pour in the batter, coating the bottom.
  5. 5. Cover the pan and cook for 3-4 minutes until bubbles form, then flip and cook for 2 more minutes.
  6. 6. Repeat until all batter is used.
  7. 7. Allow the crusts to cool, then poke holes in them for even cooking and dust lightly with coconut flour.
