Ingredients

Paleo Pizza Crust

  • 2 teaspoons active dry yeast
  • 1 tablespoon honey
  • 1 ¼ cups warm water
  • 1 ⅓ cups cassava flour
  • cup almond flour
  • 1 cup arrowroot powder
  • 1 ½ teaspoons kosher salt
  • 3 large eggs
  • 3 teaspoons extra virgin olive oil

Dairy-Free Fresh Mozzarella

  • ½ cup raw cashews, soaked in hot water
  • 1 ½ teaspoons nutritional yeast
  • 1 teaspoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • 4 tablespoons tapioca starch
  • 1 cup water

Paleo Pizza Toppings

  • extra cassava flour for dusting
  • cup tomato sauce
  • 1 teaspoon dried oregano
  • to taste fresh basil leaves
  • to taste pepperoni or other toppings
  • to taste freshly ground black pepper

Instructions

  1. Dissolve yeast and honey in warm water and let it bloom until foamy.
  2. Blend all mozzarella ingredients until smooth, then heat in a saucepan while whisking until thickened.
  3. Combine flours, salt, and olive oil in a food processor, then add the bloomed yeast mixture and eggs to form the dough.
  4. Let the dough rise in a warm place for 60-90 minutes.
  5. Preheat the oven to 500°F with a baking sheet inside.
  6. Divide the dough and shape it into a circle on parchment paper, then spread tomato sauce and mozzarella on top.
  7. Transfer the pizza to the preheated baking sheet and bake for 6-8 minutes until the crust is browned.
  8. Remove from the oven, add fresh basil, slice, and serve.
