Ingredients

The crust

  • cups almond flour
  • 1 cup tapioca flour
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp basil
  • ½ tsp ground pepper
  • 2 pcs eggs
  • 2 tbsp grass-fed butter, ghee or coconut oil
  • cup water

The toppings

  • ½ cup marinara sauce
  • 5 oz pepperoni, thinly sliced
  • pc onion, thinly sliced
  • ½ cup olives, thinly sliced
  • ½ pc bell pepper, thinly sliced
  • ½ cup mushrooms, thinly sliced
  • 7 oz buffalo mozzarella, sliced into rounds (optional)
  • to taste fresh basil (to garnish)

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  2. Combine all dry ingredients for the crust in a large bowl and whisk together.
  3. Make a well in the dry mixture, add eggs, and whisk them in.
  4. Add melted butter (cooled) and mix into the dry ingredients, gradually adding water until a thick dough forms.
  5. Scoop the dough onto the prepared baking sheet, sprinkle with tapioca flour, and shape into a circular crust about 3/8 inch thick.
  6. Bake the crust for 20 minutes.
  7. While the crust bakes, prepare the toppings.
  8. After 20 minutes, increase the oven temperature to 400°F.
  9. Add toppings to the baked crust in the specified order, placing mozzarella last if using.
  10. Bake for an additional 15 minutes, then remove from the oven and garnish with fresh basil before serving.
