Ingredients

The chicken and broccoli

  • 2 tablespoons olive oil
  • 6 7-ounce boneless, skinless chicken breasts
  • 12 ounces fresh or frozen broccoli florets

The seasoning and topping

  • 1 teaspoon Kosher salt
  • ¼ teaspoon garlic powder
  • 2 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F and grease a rimmed baking sheet with 1 tablespoon of olive oil.
  2. Arrange the chicken breasts in the center of the baking sheet and place the broccoli around them.
  3. Drizzle the remaining olive oil over the broccoli and sprinkle everything with salt and garlic powder.
  4. Bake for 25 to 30 minutes until the chicken is cooked through, reaching an internal temperature of 160°F.
  5. In a small bowl, mix the minced garlic, Parmesan, and parsley.
  6. Top each chicken breast with the garlic-Parmesan mixture and broil for 3 minutes until the cheese is melted and the broccoli is browned.
  7. Remove from the oven, tent with foil, and let rest for 5 minutes before serving.
