Instructions
- Heat olive oil in a large saucepan and cook onions and garlic until tender.
- Add crushed tomatoes, Italian seasoning, oregano, basil, salt, pepper, and white wine to the saucepan, then add the bay leaf and simmer for 20 minutes.
- Preheat the oven to 450°F and prepare a large sheet pan with cooking spray.
- Combine breadcrumbs, seasonings, and parmesan cheese in a bowl.
- Melt butter in the microwave and brush it onto the chicken, then dip into the breadcrumb mixture.
- Place the chicken on the sheet pan and repeat for the remaining breasts, spraying cooking spray on top.
- Cover the pan with parchment paper and bake for 20 minutes.
- Remove from oven, spoon marinara sauce over each chicken piece, and top with mozzarella cheese.
- Spread broccoli and yellow pepper around the chicken, season with salt and pepper, and bake uncovered for an additional 10 minutes until cheese is melted.
- Allow to cool before serving.
