Instructions
- Toast the bread if desired.
- Heat a skillet over medium heat and add the eggplant bacon, cooking for 1-2 minutes on each side until warmed through.
- Spread vegan mayo or hummus on the toasted bread slices.
- Assemble the sandwich by layering eggplant bacon, onion, tomato, and lettuce on one slice of bread.
- Top with the other slice of bread, slice if desired, and enjoy.
