Ingredients

  • 2 slices Vegan Sandwich Bread
  • 5-6 slices Eggplant Bacon
  • 2 Tbsp Vegan Aquafaba Mayo or Hummus
  • ¼ medium red or white onion
  • ½ medium ripe tomato
  • 2 leaves green lettuce

Instructions

  1. Toast the bread if desired.
  2. Heat a skillet over medium heat and add the eggplant bacon, cooking for 1-2 minutes on each side until warmed through.
  3. Spread vegan mayo or hummus on the toasted bread slices.
  4. Assemble the sandwich by layering eggplant bacon, onion, tomato, and lettuce on one slice of bread.
  5. Top with the other slice of bread, slice if desired, and enjoy.
