Vegan BLT Sandwich

romaine or butter lettuce

Instructions
- Prepare the coconut bacon ahead of time.
- Toast the bread to your liking.
- Halve and pit the avocado, then mash it with a pinch of salt until smooth.
- Spread the mashed avocado on both slices of bread.
- Spread a generous amount of coconut bacon on one slice and press it into the avocado.
- Slice the tomato and place 2 to 3 slices on top of the bacon.
- Sprinkle black pepper over the tomato and add the lettuce.
- Top with the other slice of bread, avocado side down, and slice the sandwich in half if desired.
