Vegan BLT Sandwich

Ingredients

  • 2 slices whole grain bread
  • 1 medium ripe avocado
  • ΒΌ cup coconut bacon
  • 1 medium ripe red tomato
  • several small leaves romaine or butter lettuce
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the coconut bacon ahead of time.
  2. Toast the bread to your liking.
  3. Halve and pit the avocado, then mash it with a pinch of salt until smooth.
  4. Spread the mashed avocado on both slices of bread.
  5. Spread a generous amount of coconut bacon on one slice and press it into the avocado.
  6. Slice the tomato and place 2 to 3 slices on top of the bacon.
  7. Sprinkle black pepper over the tomato and add the lettuce.
  8. Top with the other slice of bread, avocado side down, and slice the sandwich in half if desired.
