Shrimp Ceviche Cocktail

diced English cucumber, not peeled

serrano pepper, seeds removed and minced

Instructions
- Combine red onion, lime juice, olive oil, and a pinch of salt and pepper in a small bowl and let marinate for at least 5 minutes.
- In a large bowl, mix together shrimp, avocado, tomato, cucumber, and serrano pepper.
- Add the marinated onion mixture and cilantro to the shrimp mixture and gently toss.
- Adjust salt and pepper to taste.
- Fill martini glasses with shredded lettuce and top with 1/2 cup of the shrimp salad.
- Garnish with a sprig of cilantro and serve with a lime wedge.
