Shrimp Ceviche Cocktail

Ingredients

  • 1 lb large cooked, peeled shrimp
  • 1/4 cup chopped red onion
  • 2 small limes, squeezed
  • 1 tsp olive oil
  • 1 medium hass avocado, diced into chunks
  • 1 medium tomato, diced
  • 1 cup diced English cucumber, not peeled
  • 1 unit serrano pepper, seeds removed and minced
  • 2 tbsp chopped cilantro, plus more for garnish
  • to taste salt and fresh black pepper
  • 1 lime cut into wedges for serving
  • 2 1/4 cups shredded iceberg lettuce

Instructions

  1. Combine red onion, lime juice, olive oil, and a pinch of salt and pepper in a small bowl and let marinate for at least 5 minutes.
  2. In a large bowl, mix together shrimp, avocado, tomato, cucumber, and serrano pepper.
  3. Add the marinated onion mixture and cilantro to the shrimp mixture and gently toss.
  4. Adjust salt and pepper to taste.
  5. Fill martini glasses with shredded lettuce and top with 1/2 cup of the shrimp salad.
  6. Garnish with a sprig of cilantro and serve with a lime wedge.
