Lobster Grilled Cheese Sandwich

Ingredients

The spread

  • ½ to ¾ stick butter, room temperature
  • 1 teaspoon chili paste

The filling

  • ½ cup Wisconsin Mascarpone Cheese, softened
  • 2 scallions thinly sliced (white and green parts)
  • ¼ cup tomatoes, small dice
  • 4 slices country-style white bread
  • 4 slices Wisconsin Provolone Cheese
  • ½ cup arugula
  • 1 cup cooked Maine lobster, coarsely chopped

Instructions

  1. Mix butter and chili paste in a small bowl and set aside.
  2. In a medium bowl, combine Mascarpone cheese, scallions, and tomatoes.
  3. Spread the Mascarpone mixture over each slice of bread.
  4. On two slices, layer with Provolone cheese, then arugula, and then lobster.
  5. Top with the remaining Provolone slices and the other bread slices, with the Mascarpone side down.
  6. Melt butter in a skillet over medium heat and place sandwiches in the skillet.
  7. Spread remaining butter on top of the sandwiches and cook until the bottom is golden brown, about 3 minutes.
  8. Flip the sandwiches carefully and press down gently, cooking for another 3 minutes until both sides are golden and the filling is warm.
