Lobster Grilled Cheese Sandwich

cooked Maine lobster, coarsely chopped
Instructions
- Mix butter and chili paste in a small bowl and set aside.
- In a medium bowl, combine Mascarpone cheese, scallions, and tomatoes.
- Spread the Mascarpone mixture over each slice of bread.
- On two slices, layer with Provolone cheese, then arugula, and then lobster.
- Top with the remaining Provolone slices and the other bread slices, with the Mascarpone side down.
- Melt butter in a skillet over medium heat and place sandwiches in the skillet.
- Spread remaining butter on top of the sandwiches and cook until the bottom is golden brown, about 3 minutes.
- Flip the sandwiches carefully and press down gently, cooking for another 3 minutes until both sides are golden and the filling is warm.
